Vine work is adapted and controlled for each grape variety inorder to get a quality vintage of the Bullas D.O., the Monastrell, although some other varieties such as Syrah are planted.The wine Lavia is the result of the union of these factors and devoted work outside and inside the cellar. It is elaborated with the grape varieties Monastrell (70%) and Syrah (30%). The wine-making process also has a strict control. The tanksare small (5000 and 10,000 kg) and are made of stainless steel. The grapes enter into them via gravity action, avoiding the use of pumps. The entry-level Lavia is in tank for 1 year on the lees. The wine remains in repose until the get the perfect harmony from the blend. This wine is showing beautiful bouquet now that it's been in bottle since 2006. The color shows a concentration of violet at the core and on the palate; the wine is pure class. Soft, feminine tannins belie the burly reputation that Monastrell has been painted as by other wines and winemakers in Yecla and Jumilla. The flavors are still bright, with dry red berry fruits and earthy tones with structured tannins that fill the mouth. Lavia's Bullas Monastrell is balanced, fruit-driven and silky in its finish. This wine will continue to evolve in bottle for 5-7 years.

WINE ADVOCATE 90 POINTS - The 2005 Lavia is 70% Monastrell and 30% Syrah fermented and aged in stainless steel. It offers up a spicy, fragrant, earthy, blueberry-accented bouquet. On the palate it has excellent concentration and balance, pure flavors, and a lengthy finish with no hard edges.
