This is the first vintage of this wine produced and a first in the US as well. The Ashmeads decided to dedicate a special estate Shiraz to the memory of their beloved father Neil Ashmead. Early on Neil conducted the family business on the road and had an affection for fast cars as well. Hence the name “Grand Tourer Shiraz” was given to the wine. It’s seamless from start to finish and very apparent that a good deal of love and hard work went into producing it. We are very grateful to offer this special wine to our Hi-Time Customers.

in 1988 was actually purchased for repairs,
but the Yalumba coopers were eager to test their skills at turning this particular oak into new barrels.
The oak staves were reshaped to become bilge boards for barrels that turned out to be octave in
size (with a capacity of 90 litres).
Initially, the use of these octaves characterised the wine more than any other element. However, over
time, the influence of oak has evolved into a more relaxed and innovative style. Sourcing of much
finer quality American oak for the octaves and the reduction of new oak used and maturation time,
has led to a wine of greater balance and harmonious fruit integration.

Medium-bodied and well framed with firm grainy tannins and balanced freshness, it finishes long and youthfully taut. In April, Jane Ferrari of Yalumba visited Hi-Time and we sampled the astounding 2012 "Signature" Cabernet-Shiraz blend from the Barossa Valley. This sneak peek knocked our socks off so we ordered big and awaited its arrival. Well, the wait is over and the wine is here! The reviews from the wine press have also come in with a trio of critics awarding scores of at least 95 Points. They used words to describe this wine such as elegant, seductive and having overall perfect balance. This delicious red blend is an Aussie Icon whose hallmark is incredible balance and purity of fruit.

The Smith family has been making wine at Yalumba for over 165 years and has produced The Signature for more than 5 decades. Their "Signature" wine is only produced in very good years and 2012 was an exceptional year. It is deep and complex, displaying the silky texture that is the calling card of Yalumba’s red wines. The polished tannins of this remarkable wine make this one which can be enjoyed now, but also one which can be aged for several years. Enjoy!

talking Australia. And the Yalumba ‘Hand Picked’ Shiraz/Viognier 2012 is no exception. This is a wine with limited availability so we did our best to grab as much as we could from the distributor. As is the tradition in the Côte-Rôtie (and the rules of the appellation), the Syrah (or, in Australian verbiage, Shiraz) is co-fermented with a smaller percentage of the white varietal, Viognier. Yalumba’s Hand Picked Shiraz/Viognier undergoes that same winemaking process of co-fermentation. The Shiraz, along with a small amount of Viognier, are actually crushed and fermented together (what harmony!). The addition of the Viognier intensifies the color, adds an extra dimension and a wonderful fragrance to the bouquet. It also brings softness to that rich and powerful Barossa Shiraz. It’s as if the Shiraz underwent training in etiquette to tone down its demeanor! The result is a wine of elegance, a term not typically associated with Barossa Shiraz! Inside the bottle, the wine has the full and alluring flavors of Barossa along with a good level of acidity to make it lively. Enjoy!

Yalumba was founded in 1849 by Samuel Smith, British migrant and English brewer, who had brought his family to Angaston (in the Barossa Valley, South Australia) seeking a new life. After purchasing a 30-acre parcel of land just beyond the southern-eastern boundary of Angaston, Smith and his son began planting the first vines by moonlight. Samuel named his patch “Yalumba” – aboriginal for “all the land around”. Five generations and 160 years later, Yalumba, Australia’s oldest family-owned winery, has grown in size and stature, embodying all that has made the Australian wine success story the envy of winemakers the world over. Often described as one of Australia’s unsung heroes, Grenache is naturally lighter in color than Shiraz or Cabernet Sauvignon but continually provides wonderful big fruit flavors. Yalumba is extremely fortunate to have some of the oldest Grenache vines in the Barossa, with fruit for this wine being sourced from vines planted in 1898!

Spiced red berries, mixed red fruits, cedar, mint and incense make for a pleasant nosing, as crimson florals and red wine candle join the fray. Grenache can have such a sexy, inviting perfume and this old vine beauty has lost none of her charms over the years. The palate smartly echoes the nose: mainly red fruits (raspberries, cherries, redcurrant), brown spices, subtle earthiness are girded by hints of herbals and mint, with a touch of briar. Balanced acidity and supple tannins lead to a fruit-filled, nicely spiced finish. Easy-drinking, sensous, satisfying.

which maintains complexity and layers of flavor. This is a delicate and aromatic Viognier wine. The color is pale gold with green highlights, with a nose of pure aromas displaying apricot nectar, lifted honeysuckle and orange oil perfume. The particularly white peach and apricot flavours, finishing with an aromatic citrus freshness. This wine will continue to grow and develop in the bottle, firstly showing enhanced apricots and spice, then after a couple of years, honey flavors and toast.

Fortified wines like this have been a part of Yalumba since the winery was founded in 1849. This wine is closer to a traditional Port as it is made with robust red varieties like Shiraz, Grenache, Read More...
and Mourvedre with a small amount of Portuguese grapes like Touriga and Tinta Cão blended in. The 21 Year Tawny is blend of what Yalumba calls "show reserve stock." These reserves are usually used to polish the blends of other fortified wines and tawnies-they are rarely bottled on their own.
