The palate is a wonderland of flavors, from the simplicity of young black cherry to notes of cedar plank or redwood, mixed brown spices (cinnamon, allspice, clove) and more pomegranate and Belgian kriek lambic.
This is an austere wine that echoes the sweetness of youth, surmounted with a glorious layer of acidity enwrapped in a myriad of flavors and scents as described above. Two foods that came to mind to pair with this were either a rosemary/herb-encrusted chicken or pork loin with cranberries/currants.
